Our trainers possess in-depth knowledge of IDDSI guidelines and a passion for empowering care home staff with the skills they need to enhance the quality of life for those under their care.

I’m Andy Cullum, also known as The IDDSI Guy, and I’m the National IDDSI Trainer specializing in the International Dysphagia Diet Standardisation Initiative (IDDSI). With over 30 years of experience as a chef, I’ve had the privilege of bringing my culinary expertise to the healthcare sector, where I focus on helping residents with dysphagia dine with dignity. I take pride in modifying meal textures and presenting them in a way that’s both luxurious and appealing.

My work goes beyond just cooking. I’m passionate about teaching simple, effective methods for presenting meals and drinks in a person-centred way, ensuring that everyone’s dining experience is respectful and enjoyable. It’s been an honour to have my efforts recognised with the Training and Apprenticeship Award at the 2024 Public Sector Catering Awards, which highlights the impact I’ve had on catering and care teams across Avery Healthcare.

I’m also actively involved with the National Association of Care Catering and the UK IDDSI Reference Group, where I’m committed to promoting awareness and the ongoing use of the IDDSI Framework.
